What Makes This Special

This strudel uses Vietnamese-style thin dough, a spiced pumpkin and black sesame filling, and a Halloween color palette with nutmeg and black sesame for flavour and visual contrast.

Ingredients

These ingredients create a thin, stretchy dough and a moist, spiced interior with a balance between savoury sesame and sweet pumpkin. Nutmeg and warm spices are blended for autumn and Halloween.

For the Strudel Dough

  • 200g plain flour: Base for gluten formation.
  • 100ml lukewarm water: Hydration for dough extensibility.
  • 40g neutral oil: For pliability and to minimize tearing.
  • 1/4 tsp salt: Gluten strengthening and flavour.

For the Filling

  • 250g pumpkin puree: Provides body and seasonal moisture. Use homemade: roast, deseed, and mash pumpkin, then drain in a sieve for 30 min.
  • 60g caster sugar: Sweetness.
  • 40g black sesame seeds, toasted: Nutty bitterness, color contrast.
  • 1/2 tsp ground nutmeg, 1/2 tsp ground cinnamon, 1/4 tsp ground ginger, 1/8 tsp ground cloves: Blended for autumn spice.
  • 1/4 tsp fine sea salt: Balances sweet and savoury.
  • 30g unsalted butter, melted: Adds richness and slows moisture loss.
  • 20g dry breadcrumbs: Absorbs liquid, prevents soggy bottom.

For Topping

  • 1 egg yolk: For optional shine.
  • 20g pumpkin seeds (pepitas): Texture and colour on top.

Instructions

Step 1: Make the Dough

Mix flour and salt in a bowl. Add water and oil. Stir until you have a shaggy dough. Knead 8–10 minutes on a non-floured surface: gluten must develop so dough stretches thin without tearing. The dough should feel smooth, elastic, and slightly tacky, not sticky.

Shape into a ball, coat lightly with oil, place in bowl. Cover with plastic or a damp tea towel. Rest at room temperature for 1 hour. Gluten relaxes, making the dough extensible.

Step 2: Prepare the Filling

If using fresh pumpkin: roast pieces at 200°C until soft, scoop flesh, mash, and drain through a sieve 30 minutes. Water content must drop below 80% or dough will break.

Mix pumpkin puree, sugar, toasted black sesame, spices, salt, 20g melted butter, and breadcrumbs. Mix until uniform. The filling should be thick enough to mound on a spoon and not leak. Adjust with more breadcrumbs if needed.

Step 3: Roll and Stretch the Dough

Choose a large clean table or counter (80x60cm minimum). Drape a clean tea towel over the surface and dust lightly with flour.

Place dough in the center. Roll out as thin as possible (rough rectangle). Switch to hands: slide palms under and pull outward gently, working from center to edge. Stretch until you have a thin windowpane, about 60x40cm. Edges may tear; trim with scissors if thick. The dough should be almost translucent. Repair small holes by pinching.

Step 4: Fill and Shape

Brush the entire surface with melted butter (leave 10g for the top). Sprinkle the filling in a fat line along one short edge, leaving a 5cm border. Using the tea towel as support, lift and roll the dough over the filling, then roll up like a jelly roll. Tuck in sides as you go. Seal seam with a little water.

Transfer strudel, seam side down, onto a parchment-lined baking tray. Curve into a slight horseshoe for fit if needed.

Step 5: Bake

Preheat oven to 190°C (fan). Brush top with egg yolk (optional) and remaining melted butter. Scatter pumpkin seeds and a pinch of black sesame over for decoration.

Bake 40–45 minutes until golden brown. The crust should be crisp and the base firm. If leaking occurs, filling may bubble out: do not panic. Let cool at least 20 minutes before slicing. This allows the filling to set.

Pro Tips

  • Dough tears can be patched with scraps; wet the patch and press gently to seal.
  • The thinner you stretch the dough, the better the texture. If it resists, cover and rest 10 minutes, then continue.
  • Drain pumpkin puree thoroughly—excess water will burst the strudel in the oven.

Troubleshooting

Dough keeps tearing while stretching? Gluten was underdeveloped or dough not rested enough. Knead longer next time; rest another 15 minutes now.

Filling leaks out during baking? Filling too wet, or dough too thin in a spot. Mend holes before rolling; use more breadcrumbs next time.

Variations

  • Replace pumpkin with sweet potato. Adjust moisture as needed.
  • Add chopped toasted pecans or walnuts for more texture.
  • For a more savoury version, halve the sugar and increase black sesame and salt.

Storage

Store cooled strudel wrapped in foil or airtight container at room temperature up to 2 days. Re-crisp in 160°C oven 10 minutes if needed. Freeze slices up to 1 month; thaw and reheat in oven for best texture.
