What Makes This Special
This recipe uses sourdough starter for structure and subtle tang, mixes pumpkin and rosemary for autumn, and black tahini for color and sesame flavor. Pumpkin puree replaces some oil and adds moisture. Black tahini brings deep color and earthiness. The brownies are slow-baked to create a dense, fudgy, almost truffle-like center and a thin, chewy crust. No refined sugar.
Ingredients
Each ingredient is chosen for both chemistry and theme. No refined sugar is used. Texture is built with almond flour, pumpkin puree, and the gluten left in the sourdough. Black tahini replaces some fat and creates a black swirl or top layer. Pumpkin and rosemary are added for autumn and warmth; date syrup gives binding sweetness.
For the Brownie Batter
- Sourdough starter (150g): Adds tang, leavening, structure. Use discard or ripe starter. Starter must be 100% hydration (equal weight flour/water).
- Pumpkin puree (250g): Provides moisture and body. Roast pumpkin flesh, mash and cool before using. Canned puree is acceptable if unsweetened.
- Date syrup (100g): Binds, sweetens, deepens flavor. Maple syrup or honey work, but taste will change.
- Black tahini (80g): For color, fat, and bitterness. Stir well before measuring.
- Olive oil (80g): Main fat. Neutral oil (grapeseed) is a substitute.
- Almond flour (100g): No gluten, but structure and body.
- Cocoa powder (60g): Base chocolate flavor.
- Chopped dark chocolate (80g): Pockets of chocolate, helps set the crumb.
- Eggs (2 large = 110g): Set the structure. Room temperature to avoid seizing the batter.
- Ground cinnamon & cardamom (1.5 tsp, 1/2 tsp): Middle Eastern spice profile.
- Fresh rosemary (1 tbsp, finely chopped): Aromatic, autumnal, slightly piney.
- Fine sea salt (1/2 tsp): Necessary for flavor balance.
- Vanilla extract (1 tsp): Complements cocoa.
- Baking soda (1/2 tsp): Reacts with acids in starter and date syrup for minimal lift.
- Pumpkin seeds (40g, optional): For topping, green against black/orange.
Instructions
Step 1: Prepare Your Pan and Oven
- Line a 20cm square pan with parchment, leaving overhang for lifting brownies later.
- Preheat oven to 150°C (not fan, just conventional). Lower heat = slower set, denser crumb.
- The slow bake prevents overcooking the edges before the middle sets.
Step 2: Mix Wet Ingredients
- In a large bowl, whisk sourdough starter, pumpkin puree, date syrup, olive oil, eggs, and vanilla until smooth and fully combined. The acid in the starter will start activating the baking soda later.
Step 3: Combine Dry Ingredients
- In a separate bowl, sieve together cocoa, almond flour, cinnamon, cardamom, baking soda, and salt. Sifting removes lumps and prevents streaks of cocoa.
Step 4: Incorporate Rosemary and Tahini
- Stir chopped rosemary into the dry mix for even dispersion. Black tahini will be swirled, not mixed, to keep color contrast.
Step 5: Make the Batter
- Fold dry mixture into wet just until no visible streaks remain. Do not overmix; overmixing develops gluten from the starter, toughening the brownie.
- Reserve about 30g of batter for swirling.
Step 6: Add Chocolate
- Gently fold in chopped chocolate. This adds pockets of chocolate that melt during baking and help set the crumb once cooled.
Step 7: Assemble with Black Tahini Swirl
- Scrape most batter into lined pan and level with spatula.
- Gently combine reserved batter with black tahini (80g) in a small bowl for a marbled effect; dollop over surface, then swirl with a knife or skewer. Do not over-mix: the swirl is visual and also creates textural contrast.
- Sprinkle pumpkin seeds on top if using.
Step 8: Slow Bake
- Bake at 150°C for 45–60 minutes. Check at 45 mins: edges will look set, center will wobble slightly but not be liquid.
- Slow bake allows the baked proteins and starches to set gradually, avoiding a dry exterior and giving a dense, even texture.
Step 9: Cooling and Setting
- Cool in pan for 20 minutes, then lift out by parchment onto a rack.
- Cool completely (at least 1 hour) before cutting: cooling firms the structure and makes neat slices.
Pro Tips
- Use room temperature eggs and pumpkin puree. Cold ingredients will seize the emulsion and create dense spots.
- Stir the black tahini well before measuring; it separates quickly.
- Slow baking at low temperature is necessary for a dense, fudge-like crumb. Do not increase the temperature to speed up.
Troubleshooting
Center too gooey after 60 minutes? Lower the oven temperature by 10°C, cover with foil, and bake another 10–15 minutes. High moisture from pumpkin or starter sometimes slows set.
Edges dry, center not set? Oven is running hot, or pan is too dark. Use lighter pans or insulate sides with a baking sheet beneath.
Variations
- Use sweet potato puree instead of pumpkin for a different autumn flavor.
- Omit rosemary for a more traditional chocolate profile.
- Replace black tahini with regular tahini for a less pronounced color, but same texture.
Storage
Store airtight at room temperature for up to 2 days, or refrigerate for up to 5 days. Texture improves after 24 hours; flavors meld and crumb becomes denser.
