Low-Carb Thai Pumpkin Honey Scones with Caramelized Nutmeg

What Makes This Special

This scone combines Thai aromatics, pumpkin for color and moisture, a low-carb flour blend for structure, and honey for binding and flavor, with a caramelized nutmeg finish that suits autumn and Halloween.

Ingredients

The structure comes from almond and coconut flour, not gluten. Pumpkin gives moisture and orange color. Honey is the central sweetener and provides binding and color. Nutmeg caramelizes on top. Fish sauce gives Thai-style umami, balanced by lime zest and ginger. Black sesame and pumpkin seeds evoke Halloween colors.

For the Scones

  • Almond flour: base structure, holds moisture but gives a tender crumb.
  • Coconut flour: absorbs liquid, stabilizes the soft dough.
  • Baking powder: chemical leavening, lifts the scones.
  • Salt: balances flavor, enhances aromatics.
  • Nutmeg: seasonal and aromatic, caramelizes under heat.
  • Black sesame: color and Thai inspiration, optional for visual effect.
  • Pumpkin puree: moisture, color, minimal flavor impact.
  • Cold butter: creates flakiness in absence of gluten.
  • Honey: sweetener, moisture retention, caramelizes on crust.
  • Coconut milk: richness and binding.
  • Egg: structure and lift.
  • Fish sauce: Thai saltiness and depth, optional.
  • Ginger, chili: aromatics for Thai profile.
  • Lime zest: brightness, optional.
  • Pumpkin seeds/black sesame: topping, visual and textural contrast.

Instructions

Step 1: Prepare the Oven and Dry Mix

Heat oven to 200°C (fan 180°C). Line a baking tray with parchment. Whisk almond flour, coconut flour, baking powder, salt, nutmeg, black sesame (if using), and pumpkin seeds in a large bowl. Ensure even dispersal; coconut flour clumps easily and must be fully broken up for even hydration.

Step 2: Cut in the Butter

Add cold cubed butter to the dry mix. Use a pastry cutter or fork to cut it in until the mix resembles coarse crumbs, with some pea-sized pieces. These pockets of butter will melt, creating lift and tenderness. Work quickly to keep the butter cold—melted butter means dense scones.

Step 3: Combine Wet Ingredients

In a second bowl, whisk pumpkin puree, honey, coconut milk, egg, fish sauce (if using), ginger, chili, and lime zest. Whisk until fully combined. The honey binds and adds browning; pumpkin adds moisture and color.

Step 4: Mix Dough

Pour wet ingredients into dry. Fold together gently with a spatula until just combined. Do not overmix; almond and coconut flour can turn gummy if overworked. The dough should be soft but not sticky. If it’s too wet, add a tablespoon of almond flour. If too dry, add a teaspoon of coconut milk.

Step 5: Shape and Cut

Turn dough onto parchment. Pat into a circle (about 15cm across, 2.5cm thick). For Halloween, use a sharp knife or bench scraper to cut into 8 wedges. For extra effect, dust wedges with additional nutmeg and brush lightly with honey for caramelization.

Step 6: Finish and Bake

Slide parchment and scones onto tray. Sprinkle pumpkin seeds and black sesame onto the surface, pressing lightly so they stick. Bake 15 minutes until edges are set and tops are colored copper-gold. Rotate tray at 10 minutes for even baking. The honey on top will caramelize and the nutmeg will darken—this is intentional and creates aroma and seasonal color.

Step 7: Cool Briefly and Serve

Let scones cool 5 minutes on tray (they are fragile hot, due to low gluten). Serve warm or at room temperature.

Pro Tips

  • Use cold butter; if it softens, chill the dough 10 minutes before baking to preserve flakiness.
  • Taste the raw pumpkin before use; some canned puree is bitter and can dominate the flavor. (You will taste this, I will not.)
  • Black sesame can be ground with a spice grinder for better color dispersal.

Troubleshooting

Scones spread too much? Your dough was too wet. Add 10g more almond flour and work in briefly before cutting.

Texture is tough or gummy? Overmixed dough. Combine until just incorporated; do not knead.

No color/caramelization on top? Brush with more honey and bake additional 2 minutes, watching closely to avoid burning.

Variations

  • Omit pumpkin for a classic look; replace with 60g coconut yogurt for moisture.
  • Replace black sesame with activated charcoal for deeper black Halloween color (use only food-grade charcoal).
  • For a sharper Thai profile, add 1/2 tsp finely minced fresh lemongrass to the wet mix.

Storage

Cool completely, then store in airtight container at room temperature up to 2 days or refrigerate up to 4 days. Warm in oven (150°C, 5 minutes) before serving for best texture.
