What Makes This Special

This is a Czech-style sandwich cookie that swaps out the usual fruit filling for a spiced black cocoa cream and incorporates both pumpkin and maple syrup for autumn and Halloween relevance. The dough is colored by pumpkin and optionally orange gel, and cut into Halloween shapes. The filling is dark, contrasting, and spiced.

Ingredients

The dough is short and tender from the butter and egg yolk, given flavor and color by pumpkin and maple syrup. The filling uses black cocoa for color (and bitterness to balance the sweetness), and a blend of autumn spices. Each ingredient has a functional role; omitting pumpkin or maple syrup will change texture and flavor development.

For the Dough

  • 250g plain flour: structure.
  • 120g cold unsalted butter: creates short texture (tender, crumbly).
  • 50g icing sugar: sweetness, dissolves easily.
  • 60g pumpkin purée: flavor, color, added moisture—must be strained to avoid excess water.
  • 30g maple syrup: autumnal flavor, sugar, slight acidity.
  • 1 egg yolk (18g): binds dough, enriches.
  • 1/2 tsp cinnamon, 1/4 tsp ground ginger, 1/8 tsp ground cloves: spice blend for warmth and aroma.
  • 1/4 tsp salt: balances flavor.

For the Filling

  • 70g softened unsalted butter: creamy base.
  • 80g icing sugar: structure, sweetness.
  • 20g black cocoa powder: color, bitterness, Halloween contrast.
  • 1 tsp pumpkin spice blend: blend 2:1:1:0.5 of cinnamon:ginger:nutmeg:clove.
  • 1 tbsp (15g) maple syrup: sweetener, flavor, thickener.
  • Pinch salt: balances sweetness.
  • Optional: orange gel color for dough or filling to heighten contrast.

Instructions

Step 1: Strain the Pumpkin Purée

Line a sieve with kitchen paper or cheesecloth. Place 60g pumpkin purée in the sieve and let drain for 30 minutes. This reduces moisture, preventing soggy dough. Excess water in the purée will destabilize the dough and cause spreading or toughness.

Step 2: Make the Dough

Sift the flour, salt, and spices together in a bowl. In another bowl, rub cold butter into the flour mixture using fingertips until mixture resembles coarse breadcrumbs. This coats flour particles in fat, limiting gluten formation and creating a tender cookie. Sift in icing sugar, combine. In a small bowl, mix egg yolk, maple syrup, and strained pumpkin purée. Add wet to dry and mix until the dough barely comes together—do not overmix, or dough will toughen. If using gel coloring, add a few drops to the wet mixture before combining.

Step 3: Chill the Dough

Flatten dough into a disc, wrap in cling film, and refrigerate for 1 hour. This allows gluten to relax and butter to firm up, preventing spreading and ensuring a tender crumb.

Step 4: Roll and Cut

Preheat oven to 170°C (fan). Lightly flour a work surface. Roll dough between two sheets of parchment to 3mm thick. Cut out shapes with Halloween cookie cutters. Re-roll scraps once. Place shapes on parchment-lined trays. Chill 15 minutes before baking.

Step 5: Bake

Bake for 10–12 minutes or until edges are just golden. Cool on tray 2 minutes, then transfer to a wire rack. Do not overbake or cookies will be dry and brittle. Color comes from pumpkin and spices, so deep browning is not needed.

Step 6: Prepare the Filling

Beat softened butter and icing sugar until light. Add black cocoa, pumpkin spice, maple syrup, and salt. Beat until smooth and creamy. If too stiff, add a few drops of milk; if too loose, add more icing sugar. Optionally, swirl in orange gel coloring for contrast.

Step 7: Assemble

Pair cookies by size. Spread or pipe about 1 tsp filling on the underside of one cookie. Top with a second cookie, pressing gently to sandwich. Repeat. If using intricate shapes, avoid overfilling to prevent seepage.

Pro Tips

  • Strain pumpkin purée or the dough will be sticky and unpredictable.
  • Chill dough thoroughly for clean, sharp shapes and minimal spread.
  • Use black cocoa for true black color; Dutch-process cocoa will yield brown, not black.

Troubleshooting

Cookies spreading or losing shape? Dough was too warm or pumpkin puree too wet. Always chill and strain.

Filling too stiff or runny? Adjust with milk or icing sugar; butter must be at room temperature for smoothness.

Variations

  • Substitute another autumn squash (like butternut) for pumpkin.
  • Swap filling for apricot jam and dust with icing sugar for a more traditional Linzer approach.
  • Use different cookie cutter shapes for other occasions.

Storage

Store sandwiched cookies in airtight container at room temperature for 4 days; refrigerate for up to a week. Freeze unfilled cookies up to 2 months. Filling may soften at room temperature but will set in fridge.
