What Makes This Special
This focaccia integrates the aroma of brown butter, numbing heat of Sichuan pepper, and autumnal colors from pumpkin seeds and pomegranate, in a high-hydration dough that is cold-fermented for structure and flavor, with Halloween-inspired toppings for visual impact.
Ingredients
The dough uses bread flour for its gluten strength and hydration tolerance. Brown butter brings a toasted, nutty aroma and color, acting as the fat component. Sichuan peppercorns and five-spice evoke Chinese flavors, while black garlic, pumpkin seeds, and pomegranate provide color, texture, and sweet/umami contrasts. Black sesame and orange pepper intensify the Halloween theme.
For the Focaccia Dough
- Bread flour for gluten structure
- Cold water to slow fermentation and encourage extensibility
- Brown butter for aroma, color, and subtle sweetness
- Instant yeast for lift
- Salt to tighten gluten and regulate fermentation
- Sugar to feed yeast and balance the bitterness of the butter
- Sichuan peppercorns and five-spice for spice aroma
For the Toppings
- Black garlic for umami and visual contrast
- Pumpkin seeds for crunch
- Pomegranate arils for tartness and color
- Black sesame for black specks
- Optional orange bell pepper for color
- Scallion greens for freshness
- Flaky salt for surface flavor
Instructions
Step 1: Brown the Butter (Day 1, up to 4 days ahead)
- Place 125 g unsalted butter (yields 110 g after evaporation) in a saucepan over medium heat.
- Stir constantly. Watch for foaming and crackling as water cooks off. When milk solids turn deep golden brown and the aroma is nutty, immediately remove from heat (about 5–8 min). Pour through a fine mesh strainer into a heatproof bowl. You need both the clarified butter and browned bits.
- Cool to room temperature. Brown butter is central for its Maillard notes and toasting the spice.
- Refrigerate if prepping days ahead; bring to liquid before use.
Step 2: Spice Infusion
- In a dry pan, toast 8 g Sichuan peppercorns until fragrant, 1–2 min. Do not burn. Grind to a coarse powder, sieve out husks.
- Add ground peppercorns to the warm brown butter with 2 g five-spice powder. Let steep 10–30 min. This transfers volatile oils into the fat.
Step 3: Hydrate Flour (Autolyse)
- In a stand mixer bowl, combine 550 g bread flour and 425 g cold water. Mix on low with hook for 2–3 min until no dry flour remains. Rest 30 min. This starts gluten development and improves extensibility.
Step 4: Mix & Knead
- Add the infused brown butter (all of it, including solids), 10 g sugar, 14 g fine sea salt, and 6 g instant yeast to the dough. Mix on medium speed for 5–8 min. Dough will be sticky and glossy. If it climbs the hook, stop and scrape bowl.
- The dough should pass windowpane test: stretch a piece thinly without tearing.
Step 5: Bulk Fermentation (First Rise)
- Transfer dough to a large oiled bowl. Cover tightly. Let sit at room temp (18–22°C) for 1 hour.
- Every 20 min (total 2 times), perform a set of coil folds: with wet hands, lift an edge, stretch up, and fold over center. This builds structure without degassing.
Step 6: Cold Ferment (Overnight, up to 48 hours)
- After coil folds, cover and refrigerate 18–36 hours. This strengthens gluten, develops flavor, and aligns with make-ahead strategy.
Step 7: Prepare Pan and Shape
- Line a 30x40 cm rimmed tray with parchment. Pour 30 g olive oil into pan.
- Scrape dough onto tray. With oiled hands, gently stretch and dimple to fit. Rest uncovered 30 min to relax.
Step 8: Final Proof & Topping Placement
- Scatter 30 g toasted pumpkin seeds and 50 g sliced black garlic. Press them lightly into dough.
- Dimple entire surface again, pressing deeply to create craters. Drizzle another 25 g olive oil over.
- Sprinkle 5 g black sesame, 60 g pomegranate arils, and scatter sliced orange bell pepper (if using) and 20 g scallion greens. Top with flaky salt.
- Cover pan loosely and proof at warm room temp (24–26°C) for 75–90 min. At full proof, dough is wobbly and almost doubled in height.
Step 9: Bake
- Preheat oven to 220°C, fan off, at least 30 min before baking. Place a rack in lower third.
- Bake focaccia 28–32 min, rotating halfway. Surface should be deeply golden and crisp at edges. Internal temp at thickest point should be 96–98°C.
- Cool in pan 10 min, then slide onto rack. Rest at least 30 min before cutting. This prevents gumminess inside.
Step 10: Finishing
- Optionally, brush with a little more brown butter and scatter extra pomegranate or pumpkin seeds for visual effect.
Pro Tips
- Use cold water and long proof to build flavor and extensibility without excessive yeast activity.
- Always use fresh, high-quality Sichuan peppercorns; old stock loses potency and aroma.
- Press toppings in firmly before baking to prevent them dislodging during oven spring.
Troubleshooting
Dough is too sticky to handle: Chill your hands and oil them. High hydration is more manageable at cold temperatures.
Focaccia is dense, not airy: Underfermentation. Extend cold fermentation, or increase proof time at room temp until dough is jiggly and almost doubled.
Toppings burn: Add delicate toppings (like pomegranate or bell pepper) after 15 min of baking if using a strong top heat oven.
Variations
- Substitute kabocha squash for pumpkin seeds and bell pepper for a deeper autumn color range.
- Replace black garlic with charred onion for a different umami/black visual cue.
- Use red chili oil in the brown butter infusion for extra heat.
Storage
- Store tightly wrapped at room temp up to 24 hours. For longer, refrigerate up to 3 days—refresh in a 180°C oven for 8 min to restore crust. Can be frozen (sliced, wrapped) for 1 month; thaw and reheat before serving.
