Ingredients

For the Choux Pastry (Éclair Shells)

  • 70g unsalted butter
  • 100ml water
  • 50ml milk
  • 1g salt
  • 70g all-purpose flour
  • 2 large eggs (about 110g)

For the Yogurt Pastry Cream

  • 200g Greek yogurt (unsweetened)
  • 100g erythritol or allulose
  • 150ml heavy cream (unsweetened)
  • 10g cornstarch
  • 2 tsp lime juice

For the Grilled Cantaloupe

  • 200g cantaloupe, sliced
  • 1 tbsp olive oil

For the Turquoise Yogurt Glaze

  • 2 tbsp Greek yogurt
  • 2 tbsp erythritol
  • 30ml water
  • 1/4 tsp spirulina powder (optional, for color)
  • Pinch of salt

Instructions

Step 1: Make the Choux Pastry (Éclair Shells)

  1. Preheat oven to 180°C (fan 160°C). Line a baking tray with parchment paper.
  2. In a medium saucepan, combine butter, water, milk, and salt. Bring to a boil over medium heat, stirring until butter melts.
  3. Remove from heat, add flour all at once, and stir vigorously with a wooden spoon until a smooth dough forms and pulls away from the sides.
  4. Return to low heat; cook, stirring constantly, for 1-2 minutes to dry out the dough slightly (this ensures a crisp shell).
  5. Transfer to a bowl. Let cool for 5 minutes.
  6. Add eggs, one at a time, beating well after each addition. Dough should be glossy and fall slowly from a spoon.
  7. Transfer to a piping bag fitted with a 1.5cm round tip. Pipe 10cm long lines onto the tray, spacing well apart.
  8. Bake for 25–30 minutes until puffed and golden. Turn off oven, leave door slightly ajar, and let éclairs dry for 10 minutes. Cool on wire rack.

Step 2: Grill the Cantaloupe

  1. Heat a grill pan (or grill) over medium-high. Brush cantaloupe slices lightly with olive oil.
  2. Grill for 2–3 minutes per side until charred marks appear and the aroma intensifies.
  3. Let cool, then cut into small cubes (about 0.5cm). Set aside.

Step 3: Prepare the Yogurt Pastry Cream (Tempering Technique)

  1. In a bowl, whisk cornstarch, erythritol, and a splash of the heavy cream to make a smooth slurry.
  2. In a small saucepan, heat the rest of the cream gently until just steaming—do not boil.
  3. Tempering: Slowly pour half of the warm cream into the cornstarch-erythritol slurry, whisking constantly to prevent lumps. This gradually raises the temperature of the mix, preventing the starch from clumping.
  4. Return the tempered mixture to the saucepan with the remaining cream. Cook over medium-low heat, whisking constantly, until thickened (about 2–4 minutes).
  5. Remove from heat. Stir in the yogurt and lime juice. Chill until thick and cool (about 30 minutes).

Step 4: Make the Turquoise Yogurt Glaze

  1. In a small saucepan, combine water and erythritol. Heat gently until dissolved.
  2. Remove from heat. Stir in yogurt, spirulina (if using), and a pinch of salt until smooth and turquoise-hued. Cool to room temperature.

Step 5: Assemble the Éclairs

  1. Using a serrated knife, gently split each éclair shell in half lengthwise.
  2. Spoon or pipe a generous layer of yogurt pastry cream into the bottom half of each shell.
  3. Scatter grilled cantaloupe cubes evenly over the cream.
  4. Replace the top half of each éclair.
  5. Drizzle or spread the turquoise glaze over the tops. Garnish with mint leaves if desired.
