Instructions

In a large bowl, whisk together almond flour, coconut flour, whey protein isolate, baking powder, xanthan gum, and salt.

In a second bowl, beat softened butter with the keto honey substitute until light and creamy (about 1-2 minutes). Add eggs, vanilla, lemon zest, and chopped dill. Mix until combined—don’t worry if it looks a little separated.

Gradually add the dry ingredients to the wet, mixing gently with a spatula until a soft dough forms. Shape dough into a rectangle, wrap in parchment, and chill 30 minutes for easier rolling.

Preheat the oven to 170°C (fan 160°C). Line a baking sheet with parchment.

Divide dough in half. Place one half between two sheets of parchment and roll to a 5mm-thick rectangle, about 20x25cm. Carefully peel off top parchment; trim edges straight with a ruler and knife for uniform cookies.

Transfer dough (on parchment) to baking sheet. Repeat with second half of dough.

Bake each sheet 12-15 minutes or until just barely golden at the edges. Do not overbake—cookies should remain soft. Cool completely on a wire rack.

Step 3: Make the Honey Cream Filling

Step 4: Assemble the Cookies

Carefully cut each baked cookie rectangle in half crosswise to make four equal pieces (about 10x12.5cm each).

Cover loosely and refrigerate 1-2 hours to set.
