What Makes This Special

This is a sugar-free sandwich cookie that uses caramelized erythritol and pecans to produce a brittle, golden cookie with a rich, nut-based filling. The technique involves dry-caramelizing erythritol—twice—then creating a nut praline paste for the filling and incorporating caramel flavor into the cookies themselves. Autumnal pecans are prominent by mass and by flavor profile. The result is portable, neat, and suited to group serving.

Ingredients

Ingredients were selected for their ability to caramelize, emulsify, and structure the final cookie without sugar. Erythritol caramelizes at high heat but seizes more easily than sucrose. Almond and oat flours create a crisp but tender bite. Pecans provide flavor and mouthfeel, especially suited for autumn and Thanksgiving themes.

  • Butter (provides structure and crispness)
  • Erythritol (caramelizes for golden color and brittle texture)
  • Egg yolk (binds, adds richness)
  • Almond flour, oat flour (structure, flavor, and delicate crumb)
  • Salt, baking powder (structure and lift)
  • Xanthan gum (improves cohesion in absence of gluten)
  • Vanilla (aromatic)

For the Caramelized Pecan Filling

  • Pecans (toasted, then ground)
  • Erythritol (caramelized for praline)
  • Cream (emulsifies the filling)

Instructions

Step 1: Toast and Prepare Pecans

  • Preheat oven to 170°C. Spread pecans on a tray and toast for 10 minutes, rotating halfway through. Cool fully.
  • Why: Toasting enhances flavor and evaporates moisture, making nuts grind to a smoother paste.

Step 2: Caramelize Erythritol for Praline

  • Place 90g erythritol in a dry, heavy-bottomed skillet over medium heat. Watch closely. Erythritol melts and browns unevenly; stir gently as edges liquefy. When uniformly golden (about 5 minutes), immediately add toasted pecans, stirring to coat.
  • Pour mixture onto parchment and spread thinly. Cool until brittle (30 minutes).
  • Why: Caramelizing erythritol produces color and flavor, though it recrystallizes faster than sugar.

Step 3: Grind Pecan Praline Paste

  • Break cooled praline into chunks. Place in food processor; process on high until a paste forms (3–5 minutes, scraping sides). Add 20g cream and 1g salt; process again until smooth.
  • Why: Heat and friction break down nuts to release oils, forming a paste. Cream emulsifies.

Step 4: Make Caramelized Erythritol for Dough

  • Repeat caramelization with remaining 70g erythritol in clean skillet. When golden, immediately pour onto parchment and let cool to brittle, 15 minutes.
  • Process in food processor to a fine powder. This improves mixing with butter later.
  • Why: This step provides caramel flavor and color to the cookie dough itself.
  • In stand mixer, beat butter and powdered caramelized erythritol on medium for 2 minutes until creamy. Add egg yolk and vanilla; mix until emulsified (1 minute).
  • Add almond flour, oat flour, baking powder, xanthan gum, and salt. Mix on low until uniform.
  • Shape dough into a flat disk, wrap in parchment, and chill 1 hour (minimum) or overnight.
  • Why: Chilling hydrates flours, solidifies butter, and prevents spreading.

Step 6: Roll and Shape Cookies

  • Roll dough between two sheets of parchment to 4mm thickness. Use a 5cm round cutter to stamp out cookies; transfer to lined baking trays with 2cm spacing.
  • Gather scraps, re-roll once.
  • Why: Even thickness ensures even baking and sandwich structure.

Step 7: Bake

  • Bake at 170°C for 13–15 minutes, rotating trays halfway. Edges should be deep golden; centers set but not soft.
  • Cool fully on wire rack before assembly.
  • Why: Proper baking ensures crispness and caramelization.

Step 8: Assemble Sandwich Cookies

  • Pipe or spoon pecan praline paste onto underside of half of cookies (10–12g per cookie). Sandwich with second cookie, pressing gently until filling spreads to edge.
  • Optional: Melt sugar-free dark chocolate, pipe or drizzle lines across tops for presentation.
  • Why: The filling binds cookies, and the chocolate adds visual contrast for parties.

Pro Tips

  • Caramelized erythritol cools and hardens faster than sugar; pour and spread it as soon as it turns golden.
  • Use a food processor with at least 600W power to achieve smooth pecan paste; underpowered units will leave gritty filling.
  • Chill dough thoroughly; warm dough becomes sticky and unmanageable due to high fat content.

Troubleshooting

Cookies spread too much? Dough was under-chilled or butter too soft; chill longer, keep dough cold.

Erythritol clumped when caramelizing? Heat was too high or stirred too much; use moderate heat and minimal stirring, removing from heat as soon as liquid is golden.

Filling grainy? Nut paste not processed enough; scrape bowl, process longer, add a few grams more cream if needed.

Variations

  • Substitute walnuts for pecans (same weight), or use hazelnuts for a different autumnal note.
  • Add 1g cinnamon to the dough for a spiced variant.
  • For nut-free: Sunflower seeds and pumpkin seeds in equal measures can substitute pecans, texture and fat content will shift.

Storage

Store assembled cookies in airtight container at room temperature up to 4 days. For longer storage, refrigerate up to 10 days; serve at room temperature for optimal texture. Unfilled cookies freeze well up to 1 month.
