This helps hydrate the flour gently.

Step 3: Develop Gluten & Incorporate Add-ins

Switch to medium speed and knead for 5-7 minutes, until the dough is smooth, elastic, and just barely sticky. Gently fold in chopped artichoke hearts and crushed pink peppercorns by hand, using a light touch to avoid compacting the dough.
