Step 2: Knead & Initial Fermentation (10 min active, 1-2 hours proof)

Add salt. Knead dough by hand (8-10 min) or with a stand mixer (6-7 min) until smooth and elastic. Return to bowl, cover, and let rise at room temperature for 1-2 hours, until slightly puffy but not doubled. This step encourages flavor and extensibility.

Step 3: Overnight Cold Fermentation (8-12 hours)
